Potato Chowder & Cheese Biscuits

Ummmm......Cozy comfort food perfect for a fall day!  You can't beat this potato chowder recipe with flavorful cheesy garlic biscuits!

Directions:
Potato Chowder
15 or so medium potatoes, peeled and chopped into chunky pieces
1/2 a medium sized onion, diced
2 large stalks of celery with leaves, diced up small
1 cup of carrots, diced
1 tbsp of dried parsley
8 chicken bouillon cubes
1/4 tsp of pepper

Put all above ingredients into soup pot and fill with just enough water to cover vegetables.
Cook until tender, don't drain.
Then warm, until just hot, 4 cups of milk (I use 2% milk).
Take out 1 cup of the milk and whisk 2 heaping tbsps of butter and 1/4 cup of flour into the milk.
Add remaining 3 cups of milk to vegetables, then add the milk/butter/flour mixture to the soup.
Cook until hot and bubbly.

Biscuits
I use the Bisquick basic recipe which calls for 2 1/4 cups of bisquick and 2/3 cup of  milk, then I add about a 1/2 tsp of garlic powder and about a cup of sharp shredded cheese to the batter.
Mix well and knead about 10 times on a surface covered with dry bisquick.  Roll out dough to about an 1" thick and cut out bisquicks.  Place on ungreased cookie sheet or shallow pan and cook about 10 to 15 minutes in 350 to 400 degree oven or until golden brown.  My oven cooks hot so I cook them at 350.  After they are done, brush with either melted garlic butter (I buy this by the french bread at Wal-Mart) or just melt some regular butter and add some dried parsley and garlic powder to the butter.
